Berried Treasure Workshop: The Sweet Science of Strawberries

This 4 1/2 hour event will highlight the flavorful fruit with a fleeting season: the strawberry. But is it really a fruit? Or a berry? We’ll answer these questions and many more as we delve into the science of what makes strawberries so delicious and the art of preparing them to highlight their best features.

We’ll begin at Washington Farms in Bogart, where parents will join us for a brief lesson on the botanical aspect of strawberries. From there, we’ll move to the Bogart Community Center, where we’ll explore the culinary science side of things. We’ll learn how maceration harnesses the power of osmosis to make strawberries tender and juicy, and the best methods for preserving in-season berries for later use. Students will prepare and take home scratch-made Strawberry Shortcakes with freshly whipped cream and Fresh Strawberry Sorbet that’s ready to churn or freeze.

Each student will need to bring 2 1/2 pounds of strawberries, but we’ll provide all the other materials and ingredients. (A rounded gallon is about 4 pounds of berries.) For pick-your-own, families will need to arrive at the farm early enough to have berries picked by 10:00 am. Pre-picked orders should be placed in advance.

Weather permitting, we’ll take a picnic lunch break at the park across the street, so students will need to bring a sack lunch.
